Snooty Salads: Maple Braised Figs in a Grapefruit Reduction Vinaigrette


Greetings Flavour Lovers,

If you are looking for salad with complex flavours and summer freshness look no further than this exclusive FlavourFull salad. Plump black mission figs,  braised in fresh butter and organic Ontario maple syrup then reduced with a citrusy kick from juicy Ruby Red grapefruit….hey hey hey, stop the drooling. But seriously, let’s get to it.

What You’ll Need

10-12 Ripe Black Mission Figs

1/2 tbsp of butter

2 tsp cassonade (brown sugar)

Maple Syrup

A few dashes of (coarse) salt

1/4 cup (approximation) of water

Juice of 1/2 ripe Ruby Red grapefruit

Basic vinaigrette ingredients (mustard, lemon juice/vinegar, italian herbs, etc.)

1 Clove garlic

Instructions

1) Halve all the figs and preheat oven to 375°F.

2) Heat saute pan. Once hot add the butter. Once it begins to bubble and brown slightly place face down into the pan. Sear for 5 minutes until insides are brown.

3) Once the figs have seared, sprinkle the brown sugar evenly over the figs. Take the maple syrup and add two quick pours around the pan. Add a few dashes of salt to balance the taste.

4) Add water just so the figs are sitting in the water. Cover them and put the saute pan into the preheated oven and braise for 20 minutes.

5) Remove from the oven and place the figs on a separate platter. Allow to cool before chilling in the refrigerator.

Vinaigrette

1) Begin reducing leftover maple sauce on high heat. Squeeze all the juice out of 1/2 of a Ruby Red grapefruit into pan.

2) Continue reducing until mixture thickens. Think caramel. You don’t want in to burn either.

3) Pour into a Pyrex™ and allow to cool. Add the normal vinaigrette ingredients like, lemon juice/vinegar, salt, pepper, parsley oregano. Chill.

Bringing It On Home

Dice a clove of garlic and toss chilled figs with prepared greens of your choice and dressing. N.B. We don’t suggest iceberg and it will not be a good support for the rich figs and maple. Dark leafy lettuces and mixes are best preferably one the includes radicchio to add to it’s complexity.
