Fettucine With Coconut Milk Clam Alfredo

I cannot tell a lie: heavy-cream alfredo is the best ever. With that being said, let’s take a complete left turn and use coconut milk, instead of cream, with clams in a culinary rebellion that would make every Italian grandmother and purist cringe. Ready?


What You’ll Need

300 g fettuccine pasta (a good handful)

1/2 cup Coconut Milk

3 cloves Garlic

2 tbsp Italian Seasoning Blend (Oregano, Parsley, Basil)

1 tsp Salt

1 can clams juice reserved

2 tsps Apple cider vinegar

2 tsps Sugar

Parmesan (optional for dairy avoiders)

FlavourFull Creations Scotch Bonnet Powder (highly recommended)



Pasta Prep

Prepare the fettuccine according to package directions until desired doneness while preparing alfredo sauce.

Coconut Alfredo Sauce

1) Heat large saucepan and place a tiny dash of olive oil in the pan. N.B. Use very little as the coconut milk will spring oil near the end. Saute garlic, salt and spices until fragrant and pour in 1/4 cup of the coconut milk.

2) Open can of clams and strain off juice and add approximately 1 tbsp at a time stirring and reducing.


3) Once all of the clam juice has been stirred in, add clams and combine with the sauce. Allow to heat through and reduce. Stir occasionally so that it doesn’t burn.

4) Once well reduced add the remaining 1/4 cup of coconut milk and simmer.

5) Prepare vinegar and sugar mixture. Make sure it is well dissolved.  Add to the alfredo sauce and stir well. This will cut some of the nuttiness of the coconut milk.  Allow to simmer 2-5 minutes longer.

6) Add cooked pasta toss and serve. Garnish with FlavourFull Creations Scotch Bonnet Powder and a little parmesan. Also delicious with our Pure Ground Jalapeno Powder.

Cooking Time: 20 minutes

Servings: 2-4 servings

We used traditional durum semolina pasta here but for gluten-free eaters, rice pasta can easily be substituted with fantastic results. We like Rizopia’s fussili pasta with this alfredo sauce.

    Hay, I have nothing against purist Italians but I think this sounds supper good.

    • Neither do we, but we love to rock the boat, lol. Funny story: I was in a little Italian grocery store and the shopkeeper was complaining to her mom that some customer came in and started complaining about the quality of the red peppers in the store. She then says “why is she complaining about my peppers. I said to her ‘what kind of Italian are you? You don’t even have a garden?'” Always giggle at that one.         I wish I had my garden still, I moved into a apartment 2 years ago and all my plants died because the patio was too shaded. I’m getting ready to move again, in August. Just late enough to miss the season and regret it the entire time.

  2. Aww, don’t worry. Everything happens for a reason. You could get some fall harvest stuff going. I guess you have to find a good farmer’s market!
