Snooty Salads: Simple Endive & Walnut Slaw

Despite the title, this salad was made by one of the humblest people you could ever meet. They survived on this simple salad in the midst of their studies at the Sorbonne in Paris. Anyone who has been intensely immersed in studies knows how quickly eating a solid meal becomes and afterthought. If you are a student you will appreciate this quick and easy recipe that takes little time but gives back in a big way.


What You’ll Need

2 fresh endives

2 cloves garlic

1-2 tsps olive oil or as you like

Salt as you like

Black pepper

1 handful crumbled walnuts


TEAR or chop up your endives

DRESS with the olive oil

MINCE garlic and top salad

ADD 1-2 small pinches of black pepper and salt to taste

CRUMBLE walnuts then toss salad.

I would advise you let it sit a few minutes as the bitterness of the endives will dissipate and the flavours will harmonise a bit. If you hate bitter anything this may not be the salad for you but it is fresh and healthy with a good kick of protein from the nuts.
