Perfect Pomodoro Everytime


It may be that the best cooks are not the ones able to obnoxiously ramble off a list of exquisite truffle and caviar types but those who have an intuitive understanding of the interplay between different foods and spices. It’s a bit of an open secret that the most beloved meals are not the ones with a long list of fancy ingredients but a few well-matched simple ones. It is the relationship between the ingredients that is respected and understood.

Italian cuisine is one of the greatest testaments to this secrets. Why do people love to cook Italian? It’s delicious and easy and makes us look like whizzes in the kitchen. Oh yeah and it tastes great.

With just 4 ingredients and a few simple spices I will show you the last pomodoro recipe you will ever need.

What You’ll Need

3 Tomatoes

3-4 Cloves Garlic

1 tbsp olive oil

2 Pinches Oregano

1/2 Tsp Kosher Salt

1 tbsp Parmesan

350-400g Spaghettini pasta

1 pinch FlavourFull Creations Pure Jamaican Scotch Bonnet powder (highly recommended)

Instructions

Pasta Prep

Prepare a pot of boiling water to accommodate the pasta. Add salt a pinch of salt and oil to the water. Aside: I know that there is a bit of a debate about oil in the water. Cook according to package instructions.

Pomodoro Sauce

CHOP garlic & dice tomatoes

HEAT large saute pan on medium-high heat and add olive oil. About 2-4 turns around the pan depending on the mouth of your olive oil bottle. Pan should be coated.

ADD chopped garlic and sautee until fragrant. About one minute. DO NOT let it burn.

TOSS in 1-2 pinches of oregano and salt. Once these ingredients are combined and the garlic is softening add the diced tomatoes ensuring that all of the water from them is added as well.

ADD pasta to boiling water and cook according to package directions.

COMBINE and bring to a sputter then simmer for about 5 minutes. Add grated parmesan midway.

DRAIN pasta in a colander. You may rinse it you wish to stop the cooking and to firm up the pasta some.

TOSS pasta and pomodoro sauce together.

TOP with some more parmesan and FlavourFull Creations Pure Jamaican Scotch Bonnet powder.

PLACE onto plates for your smiling and grateful guests, like so.
