This Salad Just Might Save Your Life

No one is in a rush to die. That is no secret seeing the slew of products advertised as life lengtheners. (This is in no way to downplay those suffering with depression and suicidal thoughts.) Let’s not forget the controversy and legal drama surrounding POM Wonderful, the California pomegranate juice producer, about their ads. While the final ruling was the health claims made were misleading, and a 20-year cease-and-desist order was applied, they spun it by including a part of  the judge who presided over the case in a subsequent ad campaign.

The ruling Monday by Judge D. Michael Chappell came in response to a complaint by the Federal Trade Commission two years ago. He found that the company had insufficient evidence to support claims that its juice reduced the risks of heart disease, prostate cancer and impotence, and issued a cease-and-desist order that forbids the company from making the claims for 20 years.

Those aspects of the judge’s ruling are not mentioned in Pom Wonderful’s new ads, however. While that is all wonderfully exciting and PhD thesis material for a Communications major, we have got a salad that is packed with so many cell revitalising, GI Tract protecting and blood enriching nutrients that we would step into court any day to defend our title.

BEETS help cleanse the blood and create more red blood cells. They are useful for treating and curing anemia. Heavy daily beet consumption has even been used to treat leukemia and other cancers. Some specific anti-carcinogens are bound to the red coloring matter, and beets have also been found to increase the cellular intake of oxygen by as much as 400 percent.

SPINACH belongs to the same family as beets and chard. The three main types of spinach are smooth leaf, savoy (this has wrinkled, curly leaves) and semi savoy (a hybrid between the two types). All are rich in nutrients, especially baby spinach leaves, which have 90 percent more that an [sic] iceberg lettuce.

According to research, people who eat the most garlic and onions (a close family member to garlic) have increased protection against at least five forms of cancer, including esophageal, colon, breast, ovarian and prostate cancer. Nearly thirty studies have shown that garlic has some cancer-preventative effect, in particular for prostate and stomach cancers.

RADICCHIO is a rich source of dietary fiber, vitamins and minerals. It has high levels of antioxidants and studies show that the antioxidant content in radicchio is higher than that of spinach and blueberries. It is low in calories and is free of fats and cholesterol.

RED PEPPERS contain lycopene, a carotenoid whose consumption has been associated with reducing the risk of prostate cancer and cancers of the cervix, bladder and pancreas. Recent studies suggest that individuals whose diets are low in lycopene-rich foods are at greater risk for developing these types of cancers.

ROMAINE LETTUCE also known as cos lettuce, is the most nutritious of all lettuces and is an excellent source of Vitamin C – more than five times that of iceberg lettuce. This salad vegetable has deep green, long leaves with a crisp texture and a stronger flavor than iceberg lettuce, and is more tender and sweeter than other lettuce varieties. Like all lettuces, it has a low-calorie content and high water volume. In addition to its high Vitamin C content, romaine lettuce is also an excellent source of Vitamin A. Research has shown that to absorb maximum Vitamin A from this salad leaf, it should be combined with a fat, such as olive oil from salad dressing.

The nutrients found in summer squash, including the courgette (ZUCCHINI), are useful for the prevention of many other conditions. High intakes of fiber-rich foods help to keep cancer-causing toxins away from cells in the colon, while the folate, Vitamin C, and Beta-carotene help to protect these cells from the chemicals that can lead to colon cancer. The antioxidants Vitamin C and Beta-carotene also have anti-inflammatory properties that make them helpful for conditions like asthma, osteoarthritis, and rheumatoid arthritis, where inflammation plays a big role.

Where Have You Been All My Life?

Now that those laugh lines are starting to appear; sending little reminders of the waning of your spring chickenness, and your denial that the stubborn little pang is not from the onset of old age, has you looking back with some regret for ignoring these foods before.
