Fun With Fruit ~ Almond Crunch Pomerapple Kiwi Salad

Even the most dynamic culinarians need some musing every now and then. I was totally inspired upon seeing this really cool mint & pomegranate salsa. Admittedly, I have not yet tossed myself up a batch but seeing that I had a huge pomegranate on hand… I decided to do something fun with it.

The pomegranate is such a luxurious and regal fruit. It exudes refinement and delicacy. They take a little patience to shell but all the best things take effort, don’t they?


Pomegranate preparation can be a really messy endeavour. To avoid this, I like to chill the pomegranate in the fridge so that the juice wont spurt everywhere. I used the entire pomegranate and one quarter of the pineapple because it was huge. Then I added a kiwi to punch it up and some crushed almonds to give it some texture. You can always choose whatever proportions you wish. Eating nuts with citrus fruit is ridiculously nutritious and a wonderful way to mix fruit with protein while keeping good food combinations.

CUT the pomegranate in 4 sections and the pineapple into slices then dice into 1/2 inch cubes.

PEEL the Kiwi and roughly chop them to medium thickness

MASH the almonds with a mortar and pestle, or whatever you have then drizzle over the salad.

TOSS and Enjoy!
